Cauliflower Soup Recipe

Hi Everyone,
Geeze, I forgot the BEST part!!
One last gift from the day, Barnie, the Chef at Harwig's, gave me his recipe for the mouthwatering cauliflower soup that we ordered. I didn't think he'd do it--but he did, much to my delight and I will share it with you:
Cauliflower Soup
1/2 cup diced onion
1/2 cup diced celery
2 tblsp. garlic
1 stick of 'real' butter
1/2 gal of duck stock
1 head cauliflower
1 cup Gruyere cheese
2 cups heavy cream
1/4 cup plum wine redux.
herbs (fresh from the Yampa botanical garden):
sage
paprika
thyme
rosemary
salt
white pepper
I'm telling you: this is a soup to die for!!! Bon apetite!
